Pour half a cup of the cream into the cup of water, which you will place on the stove in a double boiler. Add the vanilla extract to the saucepan, and then add the sweetener and egg yolks as you heat everything. Make sure to not let it boil, as that will ruin it.
Add the last two cups of cream, and let everything heat properly before pouring the mixture into a bowl and cover it with a piece of wax paper. After letting it sit for 2 hours, pour it into your ice cream maker and follow the directions. You will end up with about 4 cups of delicious ice cream, with only about 3 grams of carbs per cup.
